Apple Cinnamon Pancakes

Happy Saturday morning!! Are you looking for something to make for breakfast? How about lunch...or even dinner? These apple cinnamon pancakes will treat you right. They are hearty, filling, sweet, and cinnamony.


Apple Cinnamon Pancakes
modified from New Vegetarian Cuisine

1 cup white flour
1 cup whole wheat flour
3 teaspoons baking powder
cinnamon to taste (I never measure and use alot)
1/2 cup ground flaxseed (optional)
1-2 small apples, diced
2 cups fat free soymilk
1/4 cup egg substitute
2 tbsp canola oil
1 tbsp honey

-Mix the flour, baking powder, flaxseed and cinnamon in a bowl. Stir in the apples.
-In a small bowl, mix the milk, egg, oil, and honey. Pour over the flour mixture and stir well.
-Add about 1/2 cup of pancake batter to the griddle. Cook until done all the way through, flipping halfway.

I serve these with a little bit of butter and some maple syrup. They fluff up nicely and are really thick and oh, so good!! Look at those layers of apples.


My kids love these and I think my son eats more than I do. He is quite the eater!! When he's a teenager, we might have to take out a 2nd mortgage just to pay the grocery bill.

YUMMMMMMM!!!!!!!!!!!!!!! I think I know what me and Mom are going to make! We have been on an apple kick and this totally fits the bill. Thanks for giving this preggo girl something new to fixate on :)

lol..Oh My these looks sooo good..would you belive that I just had breakfast and I had pancakes..BUT!!! They were the pre-made frozen Aunt Jemima ones..should of been blogging sooner and I would have tryed these babies!!
