Sweet Melissa Sunday-Double Crusted Apple Pie

Hi everyone!!! I have another delicious recipe that I tried with the SMS group...Double Crusted Caramel Apple Pie. YUM!! Susan, from Baking With Susan picked the recipe and I was soooo excited to try. I love apple pie and haven't made one in a long time. I was excited to try a different crust recipe and the cookbook had some great advice about keeping all your pie crust ingredients cold before making the crust. And I think the crust is the best part about this pie!


The crust was amazing. It called for an egg/heavy cream wash and sprinkling with sugar before baking and I think it made for a super brown wonderful crust.


I had a whole host of problems with the caramel. I could not get it to work. I think I have a few more grey hairs because of it. It got to the point on the stove where the whole concoction just seized up and became this big mass of sugar. I thought maybe I had the stove on too hot, so I tried it again. Same result!! I couldn't figure it out...so I left it out. It was either that or throw the pot through the kitchen window. Ha ha...sort of.


Because I was leaving out the caramel, I added some more sugar to the apples. Maybe 2 tablespoons extra?? And it turned out pretty good. What I realized when I cut the pie was the recipe did not ask for cinnamon. Maybe that's because of the caramel that is supposed to be inside? But I think it needs cinnamon. I love the classic combo of apples and cinnamon and I missed it with this pie.


Does anybody else always misspell cinnamon? I always spell it wrong...2 n's? 2 m's? Thank goodness for spell check!!


Go check out what all the other SMS bakers did with their pies this week! I really liked this one. I loved the crust and I think with the addition of cinnamon, the inside could be fabulous. Maybe i'll try caramel again...not to sure about it. Anybody have any suggestions? Or other caramel recipes??

Thanks so much for baking along with me this week! I didn't have a lot of luck with the caramel either. And, I think the pie needed cinnamon. I am going to try it again and cheat by using a jar of caramel topping! :) Less headaches!!

Beautiful pie - I love the heart in the middle :) The caramel gave me a lot of trouble too but I was able to use some of it (the part that didn't crystallize). I agree with you that the crust was the star and also that the filling needed cinnamon so I'll definitely do that next time!

I actually might have added cinnamon, but didn't realize it? I dont remember haha. Normally, I just keep it on until it turns about amber honey colored and that's when it's done. Mine had seized up as well when the cream when it, but you should just be able to stir it and and stir it and it should have ended up okay. Maybe mine was just luck!

Oh my GOODNESS!!! I am a lover of apple pie in a big way and this one is gorgeous! I'm sorry you struggled with the caramel but seriously, I'll come over and taste the pie and I'm sure it will be totally delish anyway ;)

Mara, your pie looks lovely! The crust looks especially tasty, I had some trouble with mine flavor wise and missed the topping. Sorry you had trouble with the caramel, I'm glad you still enjoyed the pie without it. We missed the classic cinnamon with apple combo too, will have to add cinnamon next time :)

Mara this looks FABULOUS!!! YUM!! I never have luck with my caramel.. so I buy the ice cream topping version! HA! Much easier for me!! LOL!!

Oh this looks so wonderful! I agree, it wasn't quite the same without some cinnamon in it. Melissa had a optional tip in her book about adding cinnamon to the pie crust itself (which I forgot to do) but that might have helped the pie somewhat.

Your pie turned out great. Love the heart in the middle! Sorry to hear the caramel didn't work for you. It was really delicious. I only made half the recipe and even that worked.

Next time you make caramel (using the same recipe), try these 2 tricks:
-spray the inside of the pan with non-stick spray, then add your sugar and water
-while the sugar and water are coming up to a boil, cover the pan (remove the lid once it’s boiling)

That looks so yummy. Too bad about the caramel. I've heard it is hard to make caramel, but it is my favorite flavor ever.

Carmel is tricky! Your pie looks terrific. I would miss the cinnamon too.
