Raspberry Mojitios

Happy Wednesday!! I hope your week is going well so far. I have a fabulous mojito recipe to share today. What? You've never had a mojito?? They are a great drink for the summer. It's a great mix of fresh mint, lime, light rum, and bubbles. For this recipe, you add fresh berries (I added raspberries) for a fruity delicious summery drink.


Raspberry Mojitos
-mint leaves
-fresh berries
-white rum
-simple syrup (dissolve 1 cup of sugar in 1cup of water in a small pan on the stovetop, cool for use)
-diet sprite (or club soda)
-fresh lime slices

How to make a great mojito:

1. Tear 4-5 mint leaves and add them to the bottom of a glass. Add 1 oz simple syrup. Add 3-4 raspberries. Muddle the mint leaves, syrup, and berries at the bottom of glass. This is a key step, you want to bruise and crush the mint leaves and berries.
2. Fill glass with crushed ice.
3. Add 1-2 oz white rum.
4. Top off glass with diet sprite or club soda.
5. Squeeze 1-2 lime wedges into glass.
6. Stir, sip and enjoy!!

I enjoyed these at a barbeque and they were so delicious. We also added blackberries later in the evening. This is the perfect drink to enjoy outside on your patio, or while bbq'ing with friends. Enjoy!!

I agree with Annette! I wish I could have you cater my gatherings - between your drink recipes and your dessert recipes I'm drooling here!

We're in the first day of a predicted 3 day heat wave (up to 100 degrees) here in MA - this mojito would be just the ticket when I get home from work!
