These little cuties were made in a cupcake tin. You add the cupcake liners, drop in a gingersnap for the bottom crust and then fill with pumpkin cheesecake mix. So easy!
Add some whipped cream and a drizzle of caramel and you got yourself a nice little pumpkin treat. To kick off the pumpkin season!

oh, those look and sound yum! usually for christmas i make mini cheescakes in cupcake wrappers with Nilla wafers as the crust--the ginger snap crust sounds SO good!
