Peanut Butter and Chocolate Bundt Cake with Chocolate Ganache

I know many people vow to eat healthier and exercise more for the new year. My motto for 2011 is Move More, Eat Less (thank you, Cathy Z). This recipe I'm going to share is not going to help you in the Eat Less catagory. In fact, it might actually help you in the Move More. And i'm not talking about moving to the kitchen for a second piece. This is a recipe to make and share with lots of friends or co-workers or just know that you will have to add some time to the treadmill or your running shoes to make up for it. But it's oh so worth it. Besides, woman cannot live on spinach alone.

Peanut Butter and Chocolate Bundt Cake with Chocolate Ganache:


Ooooh...yeeeaaaahhhh!! I made this for Christmas dinner. Well, not actually for dinner but for dessert but with all the healthy fats from the peanut butter it may as well be dinner. I used this recipe: Peanut Butter and Chocolate Bundt. I then made some chocolate ganache to drizzle on top.

8 oz semi-sweet chocolate chips
8 oz heavy whipping cream

Put the chocolate in a bowl. Heat the heavy whipping cream over the stovetop until the edges start to bubble. Take off heat and pour the cream over the chocolate. Do NOT mix. Let the bowl sit for 10-12 minutes. Then whisk together until it all mixes well. It will be very runny. Place the bowl in the fridge until it reaches your desired consistency. I waited a while so it was pretty firm, but I could still drizzle it. Then I chopped up peanut butter cups.


Seriously, do they make these that aren't wrapped? Why is it such a pain to get them all out of the wrapper!

But they look soooo good on top of the cake. And the bonus pool of ganache in the middle isn't too bad either.


And here's the coolest part about the cake. A lovely ribbon of peanut butter flowing through the whole thing. Looks lovely on a plate, too.

That looks amazing! I made some peanut butter/chocolate cupcakes for Christmas and added Reese cups to the top and it is a pain unwrapping them. They do make mini ones that you can sometimes find in the baking section but I don't like them as well - the peanut butter to chocolate ratio is off.

Mara this is unfair lol... OH my deliciciouness... Is that a word???... I had to giggle I can see you unwrapping all the peanut butter cups cuz I thought the same thing when I had to unwrapped a ton of camels for Carmel apples lol..

Oh my! That looks SO rich and delicious. I had the same situation (wrapper wise) over Christmas with these cupcake cookies that had rolos in them and then used a bunch more for a drizzle. My advice? Tell the kids they dont get any unless they unwrap lol! Only problem? Kids start saying, "one for me, one for the recipe" lol.

I am not a big chocolate fan but that cake looks wonderful! I bet my hubby and daughter would love it. I may have to make it for them sometime soon.

Oh my goodness! Love the peanut butter running through the whole cake! Trader Joe's has a tub of their peanut butter cups unwrapped. They are in the little liner though, I think. Maybe not
